Sushi is a traditional Japanese dish made with vinegared rice (called ‘shari’ or ‘sumeshi’) and then seasoned with sugar and salt. Then, it is combined with a range of ingredients such as seafood, vegetables, or meat. Sushi as a dish developed over time starting with its earliest form ‘narezushi’ to the Edo period ‘ haya-zushi’ and the modern ‘nigirizushi’. Its most defining component is the vinegared rice. It might look like a simple dish but it is truly extraordinary, especially the craftmanship that goes into making one. This is just like the chef Kenichi Fujimoto’s culinary journey. Unlike traditional sushi chefs, chef Fujimoto began his career in the hairdressing industry. At 22, he got his introduction to the world of sushi and started working at a mid-range sushi restaurant to hone his skills and develop his passion for the craft. Then at 27, he joined the famed Sushi Kanesaka in Ginza under the tutelage of sushi master Shinji Kanesaka. Thanks to his dedication, he subsequently became the sous chef of Shinji by Kanesaka in Macau

Ultimately, his sushi-making skills flourished as the restaurant earned its Michelin star within its first year of operation. Soon after, chef Fujimoto joined three-Michlin-starred Sushi Saito for its first overseas outlet. With decades of experience, chef Fujimoto now helms Sushi Fujimoto.
