Made for romantics and lovers of all things heartfully painful (or just plain lusty), Ruby’s cocktail philosophy is to craft drinks that feel like romantic invitations, anecdotes, and perhaps some self reflection — the further you forage, the more you understand the bar’s narrative (or yours).
“Guests who peer through Ruby’s curtains will discover a one-of-a-kind sensory journey,” says the mastermind behind Ruby’s cocktails, Stanislav Andruskevic, Kimpton Maa Lai Bangkok’s Bars & Beverage Manager. “Ruby’s, much like its namesake, is seductive, surprising and immersive, tempting guests to linger longer, exploring every mystery and inspiration.”
The menu promises unprecedented flavours, scents, and aesthetic presentations. It showcases rare components, innovative print methods, and avant-garde presentations meant to make an impression and stay with you long after you depart. From Emerald to Amethyst

Old Bangkok sets the stage for the seductive and low-lit cocktail bar’s dazzling array of 16 libations, including 14 spirited concoctions and two alcohol-free options, each drawing inspiration from the mystique of precious stones and the mind of its author, Cluster Director of Sales and Marketing Kimpton Maa-Lai Bangkok and Sindhorn Midtown Hotel Bangkok – Vignette Collection, Shane Jameson
“Yesteryear Bangkok showcases grit and rawness with a touch of unbridled passion. The drinks and their ideology, married with the tale of hurt and becoming the hurter, lift Ruby’s beyond just another cocktail bar, it’s got depth,” he said.
Bearing the bar’s name, the Ruby cocktail is the obvious place to begin any journey. A scarlet red gin-based cocktail inspired by a paper cut and a chance meeting, the drink’s delicate jasmine notes and colour-saturated ingredients include strawberry, pomegranate and hibiscus.
The elegant white Diamond pushes boundaries with an intriguing mix of Tequila Blanco, creamy Hokkaido yoghurt liqueur, organic yoghurt and pear. The drink is designed to represent, through flavour, the strength and sharpness of the famed gem.

Emerald leans into envy, witches and fairies, boasting bold gin, artisanal mezcal, melon, mango sticky rice and durian coconut foam among its ingredients.
The Blue Sapphire is meant to convey sadness and seduction within its melancholy preface. It blends vodka, elderflower, pear, butterfly pea and pear sake with blue spirulina to create a watercolour effect in your glass.

Chef Davide Calo’s refined bites complement the drinks, featuring tempura Fine de Claire oyster, fresh red prawn tartare, seared foie gras with wild mushroom and ricotta, and grilled Wagyu beef on fluffy brioche topped with truffle. These accompaniments are more than mere drinking snacks.
