AFTER AN AMAZING YEAR PACKED with creative collaborations and awards, Peach Blossoms, offering modern Chinese cuisine inside PARKROYAL COLLECTION Marina Bay, Singapore enters 2025 with even more reasons to visit.
The restaurant has a brand new menu created by Executive Chef Edward Chong, one of the region’s most talented and respected experts on Chinese flavours.
Reinterpreting traditional Chinese recipes into modern classics that serenade the palate has seen the storied chef usher Peach Blossoms to the highest of foodie echelons. It secured critical plaudits and recognition in the ’50 Best Discovery’ list of early 2024, the Top 20 Restaurants in Singapore at the Tatler Dining Awards 2024, and 74th placement on Asia’s 50 Best Restaurants 51-100 Extended List 2024, noted as the best Chinese restaurant in Singapore.
A Chef’s Story
Chef Edward’s talent and passion, paired with a relentless desire to keep improving, means the ambitious chef has shaken things up with new recipes guaranteed to delight even the most demanding appetites with the eight-course dining experience “Same Story, New Journey.”
From the Streets to the Saucepan

Leading a team at one of the best restaurants in Singapore — one of the top food cities in the world — is a high-intensity, pressurised job. Every decision can be a make-or-break moment — it’s not a role for everyone. But for Chef Edward, it is the culmination of a career that began on the wrong side of the tracks.
Chef Edward was a teenage delinquent with little interest in his studies who spent more time on the streets than in school. Before long his family grew tired of his lack of direction and sent him from his home in Malaysia to Singapore. There, at a young age, he could learn a trade under the tutelage of his uncle in the kitchen of a popular Chinese restaurant chain.

The chef struggled initially for his lack of experience and ability. But unwilling to be beaten, the young cook channelled the same hustle that saw him thrive on the streets, now applying it behind the stove.
He quickly rose through the ranks in the region’s best restaurants and earned an excellent reputation.
New Horizons
Peach Blossoms’ new menu draws on Chef Chong’s early years, life experiences and culinary development to rejuvenate old favourites. These include BLOOM, an amuse bouche of Kampachi Garlic Vinegar and Preserved Turnip. FORBIDDEN, a magical combination of snow crab, black truffles and Foie Gras brought together and enveloped inside a crispy Feuille de Brick style pastry. And BAO, a reworked bao bun stuffed with Ibérico Pork Belly and flavoured with premium Longjing tea.
The refreshed menu shows off the kitchen maestro’s expertise and the deep influence that his recent collaborations with celebrated Asian chefs have had on his creativity. These new muses include Chef Chen Zhiping of Michelin-starred Meet The Bund in China, a project which led to the creation of Peach Blossoms’ two-night only Fujian Diaspora menu, an eight-dinner exploring the rich culinary traditions of Fujian province.
The chef also partnered with Chef Takeshi’ Goh’ Fukuyama of Michelin-starred Goh in Japan, curating an exclusive two-night dinner that artfully combined French-Japanese techniques with modern Chinese cuisine.

Visitors to Singapore can look forward to more exciting collaborations from Peach Blossoms in 2025 as Chef Edward works toward his vision of redefining the possibilities of Chinese cuisine and turning the restaurant into a one-of-a-kind destination. “My goal is to build Peach Blossoms into a new icon — a restaurant that always comes to mind when the conversation is about fine Chinese food for a new generation.”
